high carb vegetables


Several people have asked me of late about vegetables on a low carb diet. Oddly, studies show that low carbers eat more vegetables than folks on other diets. Below is a list of high carb vegetables to avoid. They are all starchy and generally high in carbs. This list is not all inclusive but here are the main ones to stay away from:
  • carrots
  • beets
  • peas
  • winter squashes (particularly acorn and butternut)
  • parsnips
  • potatoes in all forms
  • sweet potatoes
  • corn
  • plantains
