oriental-style beef and vegetables


This recipe may look like it requires a lot of prep, but to save time, I cut my vegetables while the meat is browning.

Ingredients:
1 lbs of eye of round or other lean cut of beef, cut into 2 inch strips
1/4 cup sesame oil
3 small or 2 large stalks of celery, sliced into 1/2 inch slices
2 large slices of onion, cut into large chunks
1/2 medium green pepper, cut into large chunks
2 teaspoons of minced garlic
1 teaspoon of rice wine vinegar
1 teaspoon of ginger
1/2 teaspoon of cumin
1/2 teaspoon of pepper

    Directions:
  1. Place sesame oil in non-stick skillet or wok and heat briefly. Add beef strips to brown, stirring occasionally, over medium high heat.
  2. While beef is browning, cut vegetables.
  3. After beef is browned, add vegetables and seasonings.
  4. Continue cooking over medium to medium high heat, until vegetables are the consistency you prefer. I prefer my vegetables cooked well. You may like them crisper and less done.
