mexican-style black soy beans


I love black soy beans! I purchase the Eden brand black soy beans from the health food store. You can also purchase them online. I also use them in soups & stews.

Ingredients:
2 cans black soy beans, drained
1 can diced tomatoes with green chilis
red pepper flakes, if desired


    Directions:
  1. Add the drained black beans & diced tomatoes with green chilis to a medium-sized sauce pan. Season with red pepper flakes, if desired.
  2. Cook the beans over medium heat, stirring frequently for about 20 minutes or longer, until beans are tender.
  3. Enjoy!!
