zesty chicken with tomatoes & chiles


Another quick & easy chicken recipe! It's a bit spicey - hope you enjoy! If you'd like it even spicier try diced tomatoes with habanero chiles.

Ingredients:
6 skinless, boneless chicken breast whole or cut into strips (or 3 about lbs of chicken tenders)
2 tablespoons olive oil
1 small can (about 10 - 12 oz) of diced tomatoes with chilis - the brand I use has a total of 7 net carbs
1 teaspoon garlic powder
1 teaspoon cumin

    Directions:
  1. Heat oil in a large skillet over medium heat & add chicken. Cook chicken on both sides until very lightly browned.
  2. Add tomatoes, garlic powder & cumin.
  3. Simmer over medium heat for about 30 to 45 minutes or until chicken is cooked and no longer pink inside. Stir and flip chicken occasionally while cooking.
  4. Enjoy!!

Carb count: serves 6 with 2 net carbs per serving.
