zesty chicken with tomatoes & chiles
Another quick & easy chicken recipe! It's a bit spicey - hope you enjoy! If you'd like it even spicier try diced tomatoes with habanero chiles.
Ingredients:6 skinless, boneless chicken breast whole or cut into strips (or 3 about lbs of chicken tenders)
2 tablespoons olive oil
1 small can (about 10 - 12 oz) of diced tomatoes with chilis - the brand I use has a total of 7 net carbs
1 teaspoon garlic powder
1 teaspoon cumin
- Heat oil in a large skillet over medium heat & add chicken. Cook chicken on both sides until very lightly browned.
- Add tomatoes, garlic powder & cumin.
- Simmer over medium heat for about 30 to 45 minutes or until chicken is cooked and no longer pink inside. Stir and flip chicken occasionally while cooking.
- Enjoy!!
Carb count: serves 6 with 2 net carbs per serving.
