chicken nachos for 2
This is a pretty quick and easy recipe. I love mexican food, especially tortilla chips. By making your own chips, using low carb tortillas - you'll consume a lot less carbs!
Ingredients:1 lb chicken tenders
olive oil
2 tablespoons taco seasoning mix - low carb
2 low carb tortillas
4 tablespoons water
4 tablespoons salsa
4 tablespoons sour cream
4 oz cheddar cheese, shredded
salt & pepper as desired
- Add 1 tablespoon olive oil to a small skillet and heat. Add chicken tenders. Cook tenders over medium heat, turning, until lightly browned and cooked through. Shred chicken.
- Add taco seasoning mix, salt, pepper & water to the chicken. Mix well & continue cooking until most of the water has been absorbed.
- While the chicken is cooking, in a separate skillet add olive oil to cover the bottom of the skillet. Heat on medium high heat until a drop of water bubbles in the oil.
- Add 1 tortilla to the skillet, cook on both sides until golden brown. Place tortilla on paper towel to drain.
- Cook the remaining tortilla & drain on paper towel when finished.
- Cut each tortilla into 8 pie shaped wedges. Place tortilla chips on 2 plates, 8 chips per plate.
- Top the tortilla chips with 1/2 of the chicken mixture, 1/2 of the sour cream, 1/2 of the salsa & 1/2 of the shredded cheese.
- Enjoy!!
Carb count: this will depend on the brands of tortillas, sour cream & salsa that you use. I use tortillas that have 7 net carbs, 1 net carb for 2 tablespoons of sour cream, 2 net carbs for 2 tablespoons of salsa for a grand total of about 11 net carbs (including the taco seasoning mix).
