fried dill pickles

Many of our local restaurants & street festivals serve fried dill pickles. Since my family loves them - I decided to come up with a low carb version.

Ingredients:
about 2 cups of dill pickles
1 cup grated parmesan cheese - the cheap kind in the jar - not fresh grated
2 eggs
2 - 3 tablespoons of water
oil for frying

    Directions:
  1. Place enough oil in a skillet for frying - about 1/4 of an inch deep or so. Begin heating oil.
  2. In a small bowl, mix the parmesan cheese, eggs and water.
  3. Dip each pickle in the batter until coated and fry in oil. After the first side is fried to a deep golden brown, flip the pickle and fry the other side.
  4. Enjoy!!

Carb count: will depend on the pickles you use. The pickles I bought were 1 net carb per 12 pickles - so a serving of 12 pickles would be less than 2 net carbs.
